I was walking through the aisles of the grocery store a couple of days ago, and I noticed the increase in prepackaged slow cooker meals. I already know the rewards of using a slow cooker because I’ve been using mine for years, so it came as no surprise to me when others started talking about the advantages of cooking with a crock pot but why did it take the rest of the country so long to find out? But even with this increase in popularity, I’ve recently been asked by a few “newbies” “Is slow cooking really that great?”

I come from a long line of cooks and our kitchens have always been a place for us to express our creativity. Both women and men cooked in my family and frequently teased each other as to who was the best cook (without a doubt, it was my mother).  My brother had a cooking show on one of the local networks years ago and the family Bar-B-Que recipe is still one of our favorites.  However, I am the only one who has that ‘secret recipe’ as my mother entrusted it to me.  My father, grandfathers, my mother and my grandmother each had a different Bar-B-Que recipe, but it was my mother’s that was the favorite at all family picnics and church gatherings.  I inherited my family’s love of culinary adventure, but not quite as much of the talent!

The word Crock-Pot is actually trademarked by Rival Industries, but is used in every day conversations instead of the term slow cooker. Many recipes for the crock-pot require little preparation. The slow cooker can then safely be left to run unattended, making it a convenient cooking method.
Crock-pot meals can not only save you time in the kitchen, but they can also save you money as well. The reasons are as follows:
1. It keeps you out of the fast food line. After owning and operating a Cajun Seafood Restaurant and winning the best crawfish in Houston, I have noticed that many people and restaurants don’t know how to cook crawfish the proper way. That is why I wrote the three top mistakes people make when boiling up crawfish. Here we go
1) Not purging, cleaning and throwing away the dead crawfish
The quickest way to ruin a crawfish boil is to not clean or throw away the dead crawfish. No matter how well you season and cook the crawfish, you will never get rid of the gritty, sandy taste if you do not purge and clean them. While you are cleaning the crawfish, they must be sorted, pulling out the dead ones. If you cook the dead crawfish, the tail meat will be extra chewy or will just fall apart and has a very sour rotten taste.
2) Sprinkling the seasoning on the outside of the crawfish
Real boiled crawfish has the great Cajun flavored cooked all the way through to the meat. If so, I have 3 delicious chicken recipes to share with you!These recipes are all made in the crock pot (slow cooker). They only take a few minutes to prepare. If you are a busy mom, I think you will enjoy these recipes. Crock Pot Cooking TipsFill your slow cooker at least 1/2 full for the best slow cooking results. Tender vegetables such as fresh mushrooms, tomatoes or zucchini will only need to be added for the last 45 minutes of cooking time, otherwise you could over cook them. To assure even cooking of meat, be sure there is some space between the pieces to allow for circulation of heat and seasonings. Some vegetables, especially onions and carrots, often take longer to cook than meat. Always place them at the bottom of the slow cooker. Chicken Marengo2 1/2 to 3 lb. frying chicken, cut up1 (1 1/2 oz) pkg. spaghetti sauce mix1/2 c. dry white wine2 fresh tomatoes, quartered1/4 lb. fresh mushroomsPlace chicken parts in crock pot. Combine dry spaghetti mix with wine; pour over chicken. Cover and cook on low for 7 hours. Turn control to high; add tomatoes and mushrooms. Cover, cook on high for 40 additional minutes. Zucchini Chicken 1 frying chicken, cut up 1 tsp. seasoned salt 1/4 c. flour 1/2 tsp. salt 1/8 tsp. pepper 2 tbsp. grated Parmesan cheese 1/2 tsp. paprika 1 lb. zucchini, cut into thin slices 1/2 c. chicken bouillon 1 (4 oz. ) can mushrooms, drained Sprinkle chicken with seasoned salt. Combine flour, salt, pepper, cheese and paprika; coat chicken with mixture. Place zucchini in bottom of crock pot. Pour bouillon over zucchini. Arrange coated chicken on top. Cover and cook on low for 5-6 hours or until tender. Turn to high and add mushrooms and cook for an addition 15-20 minutes. Cheesy Chicken 6 boneless chicken breasts 1/4 tsp. salt 1/4 tsp. black pepper 1/4 tsp. garlic powder 2 (10. 75-oz. ) cans condensed cream of chicken soup 1 (10. 75-oz. ) can condensed cheddar cheese soup Rub chicken breasts with salt, pepper and garlic powder. Place chicken in slow cooker and pour soups over the top. Cover and cook for 6 to 8 hours on low.
