Ingredients
  

  • 2 teaspoons kosher salt
  • 1/2 teaspoon sweet paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon ground sage
  • 1 spray olive oil for spraying
  • 1 whole chicken (3 pounds, preferably organic and humanely raised)

Instructions
 

  • In a small bowl, mix the kosher salt, paprika, garlic powder, onion powder, oregano, thyme, and sage.
  • Spritz the chicken generously with olive oil spray, ensuring an even coating. Rub the spice mixture all over the chicken, including inside the cavity for maximum flavor.
  • Optional: Tie the chicken legs together tightly with butcher’s twine for even cooking and a polished appearance.
  • Let the seasoned chicken rest in the refrigerator, uncovered, for at least 30 minutes or up to 24 hours. This helps dry out the skin slightly for a crispier finish.
  • Preheat your air fryer to 350°F. Place the chicken into the air fryer basket, belly-side down.
  • Cook for 25 minutes until the bottom side of the chicken is browned and crispy.
  • Flip the chicken over carefully using tongs or heat-safe gloves. Continue cooking for another 25 minutes, or until the internal temperature reaches 165°F in the thickest part of the thigh.
  • Once cooked, transfer the chicken to a platter and let it rest for at least 10 minutes before carving. This prevents the juices from running out too quickly, keeping the meat moist.
  • Serve your beautifully cooked chicken with your favorite sides, such as roasted vegetables, salad, or mashed potatoes. Don’t forget to save the carcass for future stock-making adventures!
