Ingredients

  • 1 cup apricot preserves
  • 1 cup French dressing
  • 1 (1-ounce) package dry onion soup mix
  • 12 chicken thighs

Instructions

  • Preheat your oven to 350°F (175°C). Gather all the ingredients to have everything ready.
  • In a medium mixing bowl, combine the apricot preserves, French dressing, and onion soup mix. Stir until the mixture is smooth and well blended.
  • Arrange the chicken thighs in a single layer in a 9x13-inch baking dish. Make sure the chicken is evenly spaced for even cooking.
  • Pour the apricot mixture over the chicken, ensuring every piece is coated. Use a spoon or spatula to spread the glaze evenly if necessary.
  • Bake uncovered in the preheated oven for 50-60 minutes. The chicken is done when an instant-read thermometer inserted near the bone reads 165°F (74°C). The glaze should be bubbling, slightly caramelized, and golden.
  • Remove from the oven and let it rest for 5 minutes before serving. Pair with rice, couscous, or your favorite side dish and enjoy!
