Ingredients
  

  • ¾ cup shredded chicken (rotisserie or any cooked chicken)
  • ¼ cup barbecue sauce
  • 2 tablespoons butter
  • 2 large flour tortillas
  • ½ cup shredded mozzarella cheese, divided
  • ¼ red onion, thinly sliced

Instructions
 

  • In a small bowl, combine the shredded chicken and barbecue sauce. Stir well to coat the chicken evenly and set aside.
  • Heat a large skillet over medium heat and melt the butter. Swirl it around the pan to ensure even coverage.
  • Lay one tortilla flat in the skillet. Sprinkle ¼ cup of the shredded mozzarella cheese evenly across the surface.
  • Spread the barbecue chicken mixture over the cheese in an even layer, leaving about a ½-inch border around the edges.
  • Scatter the thinly sliced red onion on top of the chicken, then sprinkle the remaining cheese over everything.
  • Place the second tortilla on top and press lightly with a spatula to secure the layers.
  • Cook the quesadilla for 3-4 minutes on one side, until the tortilla is golden brown and crisp. Carefully flip it over and cook the other side for another 3-4 minutes.
  • Remove the quesadilla from the pan and place it on a cutting board. Let it rest for a minute before slicing into four equal wedges. Serve immediately.

Chicken: I used the shredded rotisserie chicken that you can find near the deli section of your grocery store.
