Preheat your oven to 350°F (175°C).
Spoon half of the sliced mushrooms into the bottom of a 9x13-inch baking dish, spreading them into an even layer.
Prepare your breading station: pour the beaten eggs into a shallow dish, and add the seasoned bread crumbs to another.
Dip each chicken breast into the eggs, ensuring it’s fully coated, and then roll it in the bread crumbs until evenly covered.
In a large skillet, melt the butter over medium heat. Add the breaded chicken and brown on both sides, about 3 minutes per side.
Place the browned chicken breasts on top of the mushrooms in the baking dish.
Top the chicken with the remaining mushrooms, arranging them evenly, and then layer the mozzarella cheese slices on top.
Carefully pour the chicken broth into the baking dish around the edges (not directly on the chicken).
Bake uncovered in the preheated oven for 30-35 minutes, or until the chicken is no longer pink and its internal temperature reaches 165°F (74°C).
To serve, spoon some of the mushrooms and broth over each chicken breast for added flavor, and enjoy!
