  • 4 chicken drumsticks
  • 2 limes 1 zested, both juiced
  • 1 teaspoon garlic, finely chopped
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon white pepper
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon sugar
  • 2 tablespoons sesame oil
  • 4 spring onions, chopped
  • 1 tablespoon sherry vinegar
  • 1 teaspoon grated ginger
  • 1 tablespoon soy sauce

Instructions
 

  • Place the chicken drumsticks in a glass or ceramic dish.
  • In a mixing bowl, whisk together the lime juice, lime zest, garlic, black pepper, white pepper, cayenne pepper, and sugar until the sugar dissolves completely.
  • Pour the marinade over the chicken. Use your hands to massage the marinade into the drumsticks, ensuring they are well-coated. Cover the dish and refrigerate for at least 2 hours, or up to 12 hours for maximum flavor.
  • When ready to cook, preheat your oven to 180°C (160°C for fan-assisted ovens) or Gas Mark 4.
  • Take the chicken out of the fridge and let it come to room temperature while your oven preheats. Meanwhile, prepare the dressing by whisking sesame oil, spring onions, vinegar, ginger, and soy sauce in a small jug. Set aside.
  • Heat a griddle pan over high heat. Sear the drumsticks until lightly charred on all sides. This step locks in flavor and creates a smoky, grilled finish.
  • Transfer the drumsticks to a roasting tin and bake for 20-25 minutes, or until the internal temperature reaches 75°C (165°F) and the juices run clear.
