Ingredients

  • 1 cup ketchup
  • 3 tablespoons light brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons smoked paprika
  • 2 teaspoons spicy brown mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon kosher salt
  • 1 pound chicken wing flats (wingettes)

Instructions

  • Make the BBQ sauce: Combine the ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, mustard, garlic powder, cumin, and salt in a microwave-safe bowl. Cover it with a wet paper towel and microwave on high for 7-8 minutes until it thickens, stirring halfway through. Set the sauce aside. Reuse the wet paper towel for the chicken.
  • Cook the wings: Place the chicken wings in a medium microwave-safe bowl and cover with the same wet paper towel. Microwave on high for 6 minutes or until nearly cooked through. Drain in a colander and pat dry with paper towels to remove excess moisture.
  • Coat and finish: Toss the wings with 1/2 cup of the BBQ sauce in the same bowl until evenly coated. Microwave uncovered for 4 minutes, stirring halfway, until the wings are fully cooked and glazed. Ensure the internal temperature reaches 165°F by checking with an instant-read thermometer.

Notes

Make sure you stir the BBQ sauce halfway through cooking because it can caramelize and burn around the edges if you aren’t careful. Patting the wings dry with paper towels after cooking and before tossing them in the BBQ sauce will help the sauce stick to the wings better.
