- ½ cup finely crushed herb-seasoned stuffing mix
- 3 tablespoons grated Parmesan cheese
- 1 tablespoon dried parsley
- 1 teaspoon curry powder
- 1 tablespoon Italian-style seasoning
- 3 tablespoons butter, melted
- 6 pieces skinless, boneless chicken breast halves
Preheat your oven to 350°F (175°C). While the oven heats, prep your coating by combining the stuffing mix, Parmesan cheese, parsley, curry powder, and Italian seasoning in a shallow dish.
Melt the butter in an 8x11-inch baking dish by microwaving it briefly. Swirl to coat the bottom evenly.
Dip each chicken breast into the stuffing mixture, ensuring all sides are well coated. Press lightly to adhere the crust.
Arrange the coated chicken breasts in the prepared baking dish. Sprinkle any remaining stuffing mixture over the top for extra crunch.
Bake for 20 minutes, then carefully flip the chicken pieces over using tongs. Return the dish to the oven and bake for another 20-25 minutes, or until the chicken reaches an internal temperature of 165°F and the crust is golden brown.
