Pesto Pasta with Chicken

Ingredients
  

  • 1 (16 ounce) package bow tie pasta
  • 1 teaspoon olive oil
  • 2 cloves garlic, minced
  • 2 skinless, boneless chicken breasts, cut into bite-sized pieces
  • 1 pinch crushed red pepper flakes (or to taste)
  • ½ cup pesto sauce
  • cup oil-packed sun-dried tomatoes, drained and cut into strips

Instructions
 

  • Bring a large pot of salted water to a boil. Add the bow tie pasta and cook until al dente, about 8 to 10 minutes. Drain and set aside.
  • While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant and tender, about 1 minute.
  • Add the chicken pieces to the skillet, season with a pinch of crushed red pepper flakes, and cook for about 7 minutes. Stir occasionally until the chicken is golden and fully cooked through.
  • In a large mixing bowl, combine the cooked pasta, chicken, pesto sauce, and sun-dried tomatoes. Toss everything together until evenly coated.
  • Serve warm, garnished with freshly grated parmesan cheese if desired. Enjoy!

Notes

Use as much or as little pesto sauce as you like. Using homemade pesto will taste even better, but it adds to prep time.
