- 3 large chicken breasts (approx. 2 lbs)
- 2-3 cups salsa (medium works best for balanced heat)
- 1 20 oz can crushed pineapple, drained
- 1 15 oz can black beans, drained
- 1 15 oz can corn, drained (or 1½ cups frozen corn)
- 1 4 oz can diced green chilies (or two jalapeños, seeded and chopped)
- 1 tsp salt
Place the chicken breasts at the bottom of your slow cooker.
Layer on the salsa, crushed pineapple, black beans, corn, green chilies, and salt in that order.
Cover and set the slow cooker to low for 6-8 hours or high for 4-6 hours. The chicken is done when it shreds easily with a fork.
Once cooked, remove the chicken breasts, shred them using two forks, and return the meat to the slow cooker. Stir everything well to combine.
