Instructions
Preheat your oven to 375°F (190°C). Place 1/2 cup butter in the bottom of a 9x13-inch baking dish and slide it into the oven until melted.
Once the butter is melted, spread 4 cups of shredded rotisserie chicken evenly over the bottom of the dish. Ensure the chicken is in a single, uniform layer.
Distribute the frozen mixed vegetables evenly over the chicken.
In a bowl, stir together the Cheddar Bay biscuit mix, seasoning packet, and 2 cups of milk until smooth. Pour this mixture over the chicken and vegetables, spreading gently to ensure even coverage. Do not stir.
In another bowl, whisk together 1 can of cream of chicken soup and 2 cups of chicken stock until fully combined. Pour this mixture over the biscuit topping, again avoiding stirring.
Place the baking dish in the preheated oven and bake, uncovered, for about 45 minutes. Look for a golden-brown top with just a slight jiggle in the center.
