Ingredients
  

  • 1/2 cup butter
  • 4 cups rotisserie chicken meat, shredded
  • 1 (15-ounce) bag frozen mixed vegetables
  • 1 (11.36-ounce) package Cheddar Bay biscuit mix (such as Red Lobster Cheddar Bay Biscuit Mix)
  • 2 cups milk
  • 1 (10.5-ounce) can cream of chicken soup
  • 2 cups chicken stock
  • 2 tablespoons fresh chopped parsley (optional)

Instructions
 

  • Preheat your oven to 375°F (190°C). Place 1/2 cup butter in the bottom of a 9x13-inch baking dish and slide it into the oven until melted.
  • Once the butter is melted, spread 4 cups of shredded rotisserie chicken evenly over the bottom of the dish. Ensure the chicken is in a single, uniform layer.
  • Distribute the frozen mixed vegetables evenly over the chicken.
  • In a bowl, stir together the Cheddar Bay biscuit mix, seasoning packet, and 2 cups of milk until smooth. Pour this mixture over the chicken and vegetables, spreading gently to ensure even coverage. Do not stir.
  • In another bowl, whisk together 1 can of cream of chicken soup and 2 cups of chicken stock until fully combined. Pour this mixture over the biscuit topping, again avoiding stirring.
  • Place the baking dish in the preheated oven and bake, uncovered, for about 45 minutes. Look for a golden-brown top with just a slight jiggle in the center.
  • Let the dish rest for 10 minutes before serving. Garnish with fresh parsley if desired.
